Hot on the heels of the cronut – croissant meets doughnut – comes the townie, a mashup of a brownie with a tart. (Just realised how badly that could be interpreted.)
The townie – a sweet crumbly pastry holding gooey brownie – was invented by Bea Vo of Bea’s of Bloomsbury, with hundreds being sold in the tea rooms over the last two weeks.
Townies are £2.90 to take away and are also available online.
Picked up by American news channels Today.com and CBS and described as “London’s answer to the cronut”, townies have gained a bit of a cult following in America and will be selling out pretty fast so go, go, go.
Not sure how I feel about eating brownie from a pastry case, but always willing to try innovations like this!
A colleague challenged me to come up with my own baking mashup. Here are the first few ideas I came up with. What do you think?

Cupbread: individual bread loaves in the shape of a cupcake, with a savoury cream/icing topping
